Italian Wedding Soup
In the old times, no one really knew how many people might show up for the wedding feast. The cook did not want anyone to leave her table hungry, so she knew that she could always add a little more water or broth to the soup and throw in a few more noodles if more people arrived. Quick & Easy Method: Empty contents of package into 8 cups of water.* Bring to a boil. Reduce heat and simmer 20-30 minutes.
Crockpot Method: Mama's soups are very crockpot friendly. Put contents of the bag into the crockpot with 8 cups of water* and cook on medium 4-6 hours or low 6-10 hours until you return home.
Variations: Add some meatballs and cook for 30-35 minutes until meatballs are done. Garnish with fresh Parmesan grated on top and The Olive Bin's Focaccia Bread.
*The 8 Cup method makes Mama's soups very hearty and robust. For more broth, add additional water.
